The wines

Bottles per vintage: 25-27000
Harvest: only by hand, after very careful thinnings (done in 3 times during the summer) and a diligent selection during the picking.
Fermentation: only by wild yeasts.
Technologies: Temperature control during the fermentation; no concentrators or osmose are owned neither used. In unlucky vintages we drain some of the juice away from the must.
Stabilisation: no refrigerators -after the alcoholic and malolactic fermentation the new wines are moved outside the cellar for being cleaned and stabilized by natural cold.
Ageing: the Dolcetto and the Langhe Nebbiolo are kept in inox tanks, the Barbera d’Alba is aged in French traditional barriques (for 6-8 months) and the Barbaresco in 700-litre-tonneaux (for 18 months, at least).
Sulphites: only a low quantity is needed, because of the good acidity and structure.

Clarify: gelatin and\or bentonitys.

Filtration: none
Bottle ageing: 6 months or more.
